Peach Bellini Girl

We asked a question on social about a fave brunch drink. Though mimosas are usually a unanimous favorite there’s one that always resonates with me when made perfectly and that’s the Peach Bellini! 

It can be made a million different ways (my favorite is with a good Cava) but here’s a recipe I thought was pretty yummy sounding I wanted to share. 

 

  • 2 ripe peaches, seeded and diced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon sugar
  • 1 bottle chilled prosecco sparkling wine

Instructions

  1. Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold prosecco. Serve immediately.
